Carrilleras al Oporto

¡Hola Bonit@s!

Hoy os traigo una receta ideal para estas fechas, para eventos y comidas con familiares o amigos. Es un plato que no deja indiferente.
Para prepararla necesitaréis una olla exprés. Sino, mucha paciencia y el resultado aún y así no será el mismo. Ya que la presión de la olla le proporciona a la carne otra textura y suavidad.
La receta está basada en 2 carrilleras por cabeza si no es plato principal, si lo es, contad con 3 mínimo (¡porqué es para repetir!)

  • Ingredientes:
4 personas
  • 8 Carrilleras de cerdo deshuesadas.
  • 4 zanahorias
  • 2 puerros
  • 2 cebollas
  • 2 dientes de ajo
  • 2 hojas laurel
  • 1 vaso vino Oporto
  • 2 vasos caldo de carne
  • AOVE
  • Sal
  • Pimienta

  • Elaboración:
  1. Limpiamos y cortamos bien las verduras. La cebolla en juliana y el puerro y zanahoria en rodajitas. Pelamos los dientes de ajo.
  2. Metemos las verduras en la olla y las dejamos que se vayan pochando.
  3. Mientras tanto, salpimentamos las carrilleras y las sellamos en una sartén por ambas caras.
  4. Una vez selladas y la verdura pochada unimos los ingredientes en la misma olla.
  5. Añadimos los vasos de vino y caldo y cuando empiece a hacer “chup-chup” cerramos la olla. Yo lo suelo poner al 8-9 (inducción) y durante 40 minutos.
  6. Cuando la olla acaba de hacer su magia y pierde toda la presión, la abrimos y separamos las carrilleras de las verduras.
  7. Teniendo las carrilleras por un lado y las verduras por otro, procedemos a hacer la salsa y para ello trituramos y colaremos las verduras (el colarlo es opcional, a mi me gusta hacerlo porque la salsa queda más fina).
  8. Volvemos a poner los ingredientes juntos y los ponemos a hacer chup-chup durante 5 minutitos. ¡Sin quitarle ojo, porque la salsa puede pegarse!
  9. Pasado los 5 minutos, finalmente, emplatamos y nos sentamos a disfrutar de este manjar.

  • Acompañamientos:
Yo he probado estas opciones
  1. Arroz, cualquier variedad de arroz, yo suelo usar una de guarnición que encuentro en Mercadona que lleva tres arroces.
  2. Quínoa, le da un toque muy rico además de crujiente.
  3. Patata, en puré.

Y, además, a cualquiera de las tres le podéis dar un toque verde con unos trigueros, por ejemplo.
